The New York strip is cut from the beef short loin, right behind the rib area. It's a medium, marbled, beefy steak that is both firm and tender. It goes by many other names, including strip loin steak, Omaha strip, Kansas City strip steak, ambassador steak, or simply strip steak. This cut of beef comes from the short loin, or the back, of a cow. Since the muscle doesn’t do a lot of work but there is plenty of marbling, it’s the perfect balance of tenderness and chew that many people love.
Some of our steaks processed and cut by our butcher were on the thin side, so we have reduced the price to reflect that.  The heavier weight steaks are the thicker cut steaks.
