A roaster chicken is a young chicken that is 3-5 months old and weighs 5-7 lbs, and is raised primarily for its meat. Roaster chickens are usually roasted whole, but can also be used in other dishes, like cacciatore. They have a slightly thicker layer of fat than fryers or broilers, which helps keep them moist while roasting and gives them crispy skin when cooked at high heat. Roaster chickens also produce more meat per pound than fryers.
